About Acacia Honey

The black locust, Robinia pseudoacacia, is a medium-sized deciduous tree, and its fragrant white blossoms are highly attractive to bees. The honey they make from it is naturally high in fructose, which keeps it liquid much longer than many other honeys. Its flavour is delicate, with very little aftertaste, so it sweetens without taking over.

That mild character is also why our Rose honey is made with acacia honey: it lets the rose come through.

Honey made by bees from the blossom of the black locust tree, Robinia pseudoacacia, which is also called false acacia. Our acacia honey comes from Poland. It is one of the mild honeys staff recommend when someone wants a lighter, less intense honey.

Why does acacia honey stay runny?

It is naturally high in fructose, and that keeps it liquid for much longer than most honeys. If it sets over time, that is a natural process and a sign that the honey is natural, and standing the jar in warm water brings it back to a pour.
