This easy banana bread with honey is a beautifully straightforward, one-tin job. The magic is all in the method: gently steeping whole spices directly into the wet ingredients adds a wonderful depth of flavour, while a glossy honey glaze brings a soft citrus lift.

Method

  1. Infuse the Spices Preheat your oven to 170°C fan and line a standard loaf tin with baking parchment. In a small saucepan, combine the plant milk, neutral oil, and 100g of Lemon & Ginger Infused Honey. Drop in the cinnamon stick, whole star anise, and black peppercorns. Bring the mixture up to a gentle warm over low heat until it is just steaming (be careful not to let it boil). Remove from the heat and leave it to steep for 5–10 minutes so those beautiful, warming flavours can fully develop.
  2. Mix the Banana Loaf Batter In a large mixing bowl, mash your three ripe bananas until smooth. Strain the warm, spice-infused milk mixture directly into the bowl, discarding the whole cinnamon, star anise, and peppercorns. Stir in the vanilla extract until combined. In a separate bowl, whisk together your dry ingredients: the plain flour, oats, baking powder, baking soda, and a pinch of salt. Gently fold the dry ingredients into the wet banana mixture until just combined. Try not to overmix here — keeping it light ensures a perfect, tender crumb.
  3. Bake Until Golden Pour the smooth batter into your lined loaf tin and level the top with a spoon. Arrange your remaining banana slices right down the centre, choosing to either cut them into elegant coins or slice them lengthways for a striking, modern look. Pop it into the centre of the oven and bake for 40–50 minutes. You’ll know your honey banana loaf is ready when the top is beautifully golden brown and a skewer inserted into the centre comes out clean.
  4. Apply the Honey Glaze While the loaf is cooling slightly, quickly prepare your glaze. Gently warm a tablespoon of the Lemon & Ginger Infused Honey with a teaspoon or two of plant milk to loosen it up, adding a tiny pinch of cinnamon if you fancy an extra hint of warmth. Generously brush this warm glaze all over the top of the loaf for a beautiful, sticky, high-shine finish that traps the moisture inside.

Patience. Let the loaf cool completely in the tin before you attempt to slice it. Baking with natural honey creates a wonderfully moist texture, and letting it rest gives the flavours time to settle while ensuring you get clean, perfect slices.
